Standing just outside the old city walls, Annesley's landscaped gardens impart a country-house feel, and an old vine supplies sweet red grapes to garnish the cheese plates. A pair of scallops comes with curried apple, capers and sultanas and the requisite purée of celeriac, while more traditional smoked salmon is served warm with a quail's egg and fennel salad. Mains might be roast guinea fowl with confit garlic and braised baby gem or seared tenderloin and crisped belly of pork with a little portion of ham hock lasagne in grain mustard sauce. Today's favourite dessert components of chocolate, salted caramel and nuts are piled on to a tart for afters.
