Situated within Newport's stupendously sprawling Celtic Manor resort, where there are three golf courses to choose from, not to mention around 2,000 acres of rolling parkland, Richard Davies's Epicure restaurant could be forgiven for feeling a little lost, were it not for the fact that the venue has carved out a reputation for itself as a regional hotspot. An exposed walnut floor and dripping chandeliers hanging from circular ceiling recesses set an elevated tone for the finely chiselled modern British cooking in which Davies specialises. There's an appealing blend of classical foundation and modern combining in dishes such as the potently rich foie gras torchon with orange, rhubarb and gingerbread, or torched mackerel with celeriac, apple and walnuts. Textural contrasts and forthright seasonings lend point to main dishes like the sea bass that turns up in its provençal gear, with confit peppers, courgette and aubergine, or perhaps Asian-spiced belly and cheek of pork, alight with Sichuan peppercorns and gentled with a little carrot purée. Explore a wealth of counterpointing flavours in desserts that take in pineapple and coconut soufflé with rum and raisin ice cream, or strawberries and cream parfait. If you can't resist trying a few more dishes while the going's good, there's a six-course tasting menu.
