The discrete frontage of Fraiche, in the Wirral conservation village of Oxton, gives no clue as to the feast for the senses that awaits within. Dining chez Marc Wilkinson is almost as much as a thrilling visual experience as it is one of taste, with the LED lighting changing throughout the meal, and projected images of the seasons helping to set the mood. What arrives on the plate is a visual treat, too, an array of creative presentations that will make you smile and gasp with amazement. First and foremost, the sense most stimulated will be taste, as Marc and his team deliver a highly personal experience that takes in contemporary cooking techniques while never losing sight of the produce itself – top-drawer ingredients from start to finish. An opening salvo from the six-course signature menu might be Nordic smoked salmon, bringing together bergamot cream and pineapple granité in a compelling combination, with fresh sea herbs, followed by celeriac textures with ceps and pears. Fresh fish is handled with skill, a fabulous piece of brill, say, with crisp rice noodles and a spot-on dashi broth, plus smoked yogurt and more sea herbs. Next up, Loire Valley quail stars in another course with beetroot and kohlrabi, and a wee bit of black pudding, and among sweet courses, toasted coconut flakes and foam come with yuzu gel and shards of sesame tuiles. It’s a joyful journey of texture and flavour, led by a hands-on chef who can be seen at the pass, ensuring the superb standard is maintained. The wine list has lots of interesting options at the lower end of the price spectrum alongside some outstanding vintages.
