The sense of having stepped into a contemporary art space makes a powerful initial impact at The Square, where monochrome abstracts and a strange headless sculptural group form the mise en scène for one of Mayfair's longest-running high fliers. Clément Leroy, formerly of Chantilly, cooking alongside his wife Aya Tamura, maintains the French-oriented style of the cuisine, which is as haute as it is moderne, with novel and challenging ideas coming thick and fast on the four-course menu format. First out of the traps might be a marinated Scottish langoustine with cauliflower in an aromatic welter of hibiscus and citrus, before the middle course offers foie gras seasoned with ginger in a fruity dashi broth. Main courses are essays in delicately considered balance, perhaps John Dory with sea-urchin and lychees, or the superlative matured meats that might be a three-way serving of 55-day aged pork, or 28-day Cumbrian beef fillet à la royale. If you're still feeling pretty royale at dessert stage, look to a creation of grand cru chocolate with pistachios and red shiso leaf, or salt-crusted pineapple with kombu caramel.
