A new era began for The Square in March 2016 when, after a quarter of a century at the helm, former owner and driving culinary force Philip Howard announced its sale to Marlon Abela. Fear not. Abela heads up a high-end transatlantic portfolio and knows a thing or two about the restaurant business, so the formidable reputation built here for refined modern French-oriented cuisine that utilises a wealth of thoroughbred British produce remains intact. The room was never a show-stopper, but it is refined and gently contemporary: abstract art on pearlescent walls, polished wooden floors and generously-spaced tables dressed up in pristine linen. This is Mayfair after all. Dishes unashamedly mix high and humble, opening with a sandwich, albeit a dead posh one, involving Scottish langoustine and coral mayonnaise in crisp, wafer-thin rye bread. Delving deep into the French tradition, a whole lobe of Earl Grey-steeped foie gras, coated in pumpkin seeds and sugar, is carved at table, while the sense of flavours firing on all cylinders is strong and true in a main course of Limousin veal chop with cep tart, lemon thyme and parmesan. Exceptional technical ability and intelligent thinking continue at dessert, when Rwandan coffee soufflé is lifted by intense orange gel and navelina orange sauce.
