The Ritz Restaurant is one of the world’s great dining rooms, its extravagant Louis XVI-inspired decor of murals, painted ceilings, statues and glittering chandeliers reflected from mirrored walls akin to stepping into Versailles Palace. When a special occasion meal in stunning surroundings is called for, it’s hard to beat, with legions of waiting staff pulling off a correctly polite performance with theatrical classic tableside service involving trolleys and cloches. Auguste Escoffier would find no fault with the whole show, including the classically-inspired menu, although John Williams MBE makes a fine job of tweaking the food for 21st-century diners via his own distinctively contemporary reworkings, such as the mango, gingerbread and tonka bean that accompany goose liver terrine. Elsewhere, ingredients are as good as it gets, with posh beef tournedos served with Jerusalem artichoke, watercress and a powerful red wine sauce appealing to traditionalists, or for those in search of more up-to-date ideas, perhaps sea bass partnered with quinoa, sea vegetables and smoked eel. To finish, a perfectly risen pear Williams soufflé might come with prune and Armagnac ice cream, or you could end the show with a timewarp dessert: crêpes Suzette for two, flambéed theatrically at the table.
