Belgravia's Goring Hotel is a class act, and a family-owned one at that. Its century-long service to this elegant quarter of London has seen the titled and the improvident pass through its portals, and treated with flawless civility one and all. Brushing aside all thought of brutal modernism, the lustrous dining room is bathed in light from Swarovski chandeliers of an evening, and is still equipped with a fleet of trolleys, bearing their respective freights of cheeses, puddings and daily roasts, the last providing impeccable tableside theatre by means of, say, Thursday's roast rib of Ross County beef and attendant Yorkshires. Executive chef Shay Cooper maintains a beady eye on British tradition, clearly, but not to the exclusion of more contemporary forays, so smoked eel risotto with preserved lemon and lovage oil might be the prelude to Romney salt marsh lamb and its sweetbreads with smoked aubergine, yogurt and spiced pinenuts. Trend-setters look to black fig trifle with gingerbread, caramel and buttermilk to finish, while doughty traditionalists will hardly pass up the chance of a bowl of rice pudding.
