Tucked away in St James’s, the eponymously titled five-star hotel and club is home to one of London’s most seductive dining opportunities, where the incomparable William Drabble has been producing dynamic and creative modern French cuisine since 2009. The dining room is a gem, small but perfectly formed, shimmering with rich, warm colours and bold contemporary artworks. The set lunch is a great introduction to William’s work for anyone on a budget (two choices at each course), with an all-conquering Menu Gourmand at the other end of the spectrum (including a choice of three wine flights or a juice pairing). First-rate ingredients from trusted suppliers lead the way on the à la carte menu that might take you from plump, generously-sized seared scallops with crisp courgette fritters and lettuce and basil purée, via saddle of Lune Valley lamb, with garlic purée, baby artichokes, broad beans and tomatoes, to a fresh, ripe peach dessert, with Lancashire yoghurt mousse, almond crumble and zingy lemon verbena sorbet. The technical virtuosity on display is impressive from start to finish, with attention to texture, flavour and temperature. The wine ‘book’ excels in France and does more than justice to the rest of the world.
