French super-chef Alain Ducasse is a master of haute cuisine, whose full-on formal style has made its mark at The Dorchester, but he also has a passion for more simple and humble things, particularly when they involve the sunny flavours of the Riviera. Here at the glitzy Bulgari Hotel is Rivea London, where his protégé Alexandre Nicolas draws on the tastes of Italy and France to create dynamic and classic dishes. A grand staircase sweeps downstairs to a vision of retro-style art deco glamour, cream leather and dark wood, with polished service befitting the postcode, and the menus follow suit with an array of undemanding, but stylishly realised Mediterranean food. A soft boiled egg sits alluringly atop cod brandade and pumpkin risotto, or you might open with grilled octopus, chickpeas and fennel. This is a kitchen that knows how to buy as well as cook, so the first-class produce continues to shine in a dish of duck breast partnered with textures of beetroot, radish and turnip, or another where halibut fillet arrives in the company of shellfish and Cassis white wine sauce. There's evident technical skill right the way through to a classic chocolate tart, or a contemporary take on a vacherin of hazelnut, poached pear and caramel.
