Nathan Outlaw's reach extends from the environs of his native Cornwall to the heart of Knightsbridge these days, but the specialist emphasis on premium fish and seafood survives the journey intact. In the beige-toned dining room of a smart backstreet hotel, there is something almost counter-intuitive about such an obviously maritime repertoire. The native oysters are as bracing as when they emerge from western waters, though, and make a fitting prelude to a menu that might skip nimbly from a composition of squid, mussels and salami with cauliflower and red onion salad, to hake with roast fennel in saffron-olive butter, or a cod and cuttlefish duo on a slew of beans. Meat-eaters and vegetarians are not neglected – there could be hogget cutlet to start, or ricotta dumplings for main – while desserts look the enticing part, in the form of honey custard tart with anise-scented quince and gingerbread ice cream. A five-course tasting menu explores the range, its successive stages encompassing pickled herring, octopus and bread sauce, brill in garlic hollandaise, and sea bass.
