A grand hotel on a manageable scale, the Capital in Knightsbridge is to be found lurking round the back of Harrods, and has for many years sustained a reputation for classy cooking. Importing Nathan Outlaw's formula from far-flung Cornwall was a very canny move then, and in Tom Brown, the restaurant has a head chef who is fully in tune with what Outlaw is about. Sustainable fish and seafood are the name of the game, here as in Port Isaac, and for all that you're in the big bad city, the atmosphere of bracing coastline and seashore is admirably evoked by the food. A main dish like turbot grilled on the bone, served with charred fennel and sauced with devilled shrimp butter sauce, makes the point eloquently, or there may be lemon sole, its delicacy boosted with an oyster and some tarragon-scented smoked leeks. Before that, there could be a fashionable Scotch egg variation made of crabmeat, set on a lightly curried dressing, or ritzy lobster risotto fragranced with orange and basil. If you're determined on meat, consider duck with pistachios, chicory and pink grapefruit, but don't miss finishers like orange and lemon Pavlova with yogurt sorbet, or the rhubarb ice cream sandwich that comes with golden raisins and ginger beer.
