Part of the glossy Hakkasan stable, this new-wave Chinese cuts a dash with its minimalist, clean-lined looks – all comfy banquettes, black chairs with slate-blue cushions and a glass-walled kitchen. Chef Tong Chee Hwee's creative take on contemporary Chinese cooking comes up with some striking creations, reinventing old ideas with western twists and liberal use of up-to-date cooking techniques on a range of menus that include a multi-course tasting, with a vegetarian option. As you’d hope, it all relies on produce of outstanding quality, much of it organic and sourced from around the UK, and perhaps predictably, given the city-slicker location, the experience is not for those on a budget. Splash out on a tasting menu dinner, and you will encounter revelatory constructions along the lines of chrysanthemum fish maw soup with dry scallop, coconut, and chicken stock, moving on to steamed wild sea bass with glutinous rice wine, enoki mushrooms and XO sauce, or slow-cooked Dingley Dell pork belly matched with white asparagus, pear and kumquat foam, and white truffle sauce. On Saturday afternoons only, two people may opt for the Duck and Champagne menu featuring cherrywood-roasted whole Peking duck. Desserts pursue the fusion theme with ideas such as coconut cream with lychee granite and tapioca.
