Hakkasan did such an effective job of rewriting the rulebook for Chinese cooking in the capital that it has become difficult to remember a time before it. In the Mayfair branch, just off Berkeley Square, a long corridor leads to a sharply lit room with long tables and seating at the well-stocked bar. Downstairs is a more intimate space, enclosed by intricately carved wood screens. Such is the sense of style that dress code strictures outlined on the website are worth attending to (the wearing of hats indoors is not encouraged), and the supercool approach extends to vivid reimaginings of traditional Cantonese dishes. Dim sum in their bamboo steamers are a riot of candy colours, encompassing gold-leafed lobster and lychee dumplings, caviar-dotted abalone and chicken shu mai, and truffled sole. House specialities among main dishes are silver cod glazed in Zhenjiang vinegar, wok-fried pork belly with plums and kumquat, and umami-dripping spiced okra with bonito flakes and shiitakes. Textured desserts are the last word in creativity: consider the Jivara chocolate bomb with praline and rice krispies.
