The second London branch of Hakkasan, in well-heeled surroundings just off Berkeley Square, opened in 2010, and has established itself as another destination for innovatively reworked modern Cantonese cuisine. A sense of occasion is one of Hakkasan's big drawing points. The entry along a long dark corridor towards the scent of flowers leads to a subdued, stylish environment of black slate flooring, dark wood tables and mushroom-coloured seating. The most intuitive way of starting is with a dim sum platter, comprised of scallop shumai, har gau, Chinese chive dumpling, and duck in yam bean nest, served with sweet chilli sauce, chilli oil and soy for dipping. A deep understanding of the harmoniously layered flavours in southern Chinese cooking informs main dishes like sanpei chicken cooked in a clay pot with sweet basil, chilli, spring onion and tender garlic cloves, a sticky sauce of the cooking juices coating the chicken. Nor are dishes confined to the overly familiar repertoire, when sweet-and-sour pork with pomegranate, or stir-fried venison with eryngii mushrooms, baby leek and dried chilli, are on offer. The covetable dessert is an apple creation featuring a choux bun filled with poached apple and green tea cream, garnished with fragments of almond feuilletine.
