Restaurants in the sky are common in London’s soaring cityscape these days, but the Park Lane Hilton was in the vanguard of wraparound views with its 28th-floor Windows. Naturally, hot-ticket window tables are hard to bag in the sleek art-deco-inspired room, but the split-level layout means everyone gets to tick off the landmarks: Canary Wharf, the London Eye, Buckingham Palace, the Houses of Parliament and the green expanse of Hyde Park are all spread below. The Galvin brothers’ lustrous modern French bistro style is the culinary inspiration, with Joo Won at the stoves adding tweaks from further afield – a starter of raw Orkney scallops, say, shifted up a gear with nori emulsion, blood orange, sweet soy and shiso. Top-notch materials are the building blocks of Francophile mains such as Scotch beef fillet made more luxurious with foie gras, mushrooms, braised leek and fragrant truffle, or the roasted fillet of gold-standard Skrei cod that comes timed to perfection and partnered with glazed Suffolk pork belly and a provençal stew of artichoke barigoule. To finish, fantastic seasonal cheeses are delivered at peak ripeness, or you could stick with sweet French tradition and go for a classic apple tarte Tatin with caramel sauce and rosemary ice cream.
