Wolfgang Puck may not be a household name in the UK, but this Austrian chef and restaurateur is a big deal Stateside, and his global empire includes several joints under the CUT banner. The Park Lane postcode is a sure sign that you're not going to be eating on a budget – that, plus the location in a swanky hotel in the Dorchester stable. With an über-glam decor of striking contemporary chandeliers, swathes of curtain, burnished wooden panels and a cosmopolitan, high-end vibe, this is one posh steakhouse, where top-grade beef sourced from all over the world is treated with due reverence – Australian and Japanese Wagyu, Black Angus New York sirloin, South Devon filet mignon, USDA rib-eye steak with fries – they're all here, expertly aged, sold by weight, and timed to the second on the grill, with eight sauces to choose from. If all that red meat action is too rich for your blood, the menu offers other fare, Dorset crab and lobster cocktail with spicy tomato and horseradish sauce, say, followed by sashimi-grade big-eye tuna steak. The skilled kitchen team comes up trumps with puddings too, perhaps dark Valrhona chocolate soufflé with whipped crème fraîche and toasted hazelnut gianduja ice cream, while cheeses come with nut bread, quince paste, candied walnuts and honeycomb.
