Bruce Poole has been an influential presence on the London restaurant scene over the last 20 years, branching out with The Glasshouse in Kew and La Trompette in Chiswick, and even finding the time to write a signature cookbook. The Wandsworth mothership shows a studied disregard for the whims of fashion: a purple frontage opens into a white-walled room hung with tasteful art and furnished with linen-clad tables on herringbone parquet floors, and staff demonstrate unflappable aplomb. The setting suits Poole's unfussy but highly classy cooking to perfection, and the menu is rooted in the sunny flavours of southern France and the wider Mediterranean. Foie gras and chicken liver parfait is a typically forthright opener, or there may be cod brandade with mussel Kievs, monk's beard, basil oil and garlic. Ingredients all taste supremely of themselves, as in a main course of Shetland salmon with crème fraîche, brown shrimps, samphire, pickled cucumber and sorrel, or you might stick with the heritage cookbook for a serving of côte de boeuf with chips and béarnaise. To finish, pedigree chocolate forms the backbone of a hot pudding, served with praline parfait. Otherwise, bow out on a savoury note with an array of immaculately ripened cheeses from the board.
