True, the name of the restaurant is not exactly snappy, but the Arzak name carries a lot of weight, with the family restaurant in San Sebastian a global foodie destination for seekers of the molecular fireworks known as 'New Basque cuisine'. Located in the super-cool Halkin, a minimalist mecca with a blue-chip Belgravia address, the dining room looks pristine in brilliant white, beneath a conversation-piece ceiling dangling 7,000 golden glass test tubes filled with spices – more contemporary art installation than ceiling. An à la carte menu supports the tasting menu, while a set lunch option lets budget diners sample the style for a relatively modest outlay; all rely on first-class ingredients, many of which are sourced from these shores. This is a kitchen with focus, creativity, and the confidence to tackle bold ideas, evident from the off in starters such as foie corn cob with cocoa and vinaigrette dressing. Main courses might see the flavour of beef fillet accentuated by green tomato, or venison with longan fruit. To finish, you’ll need a spot of help from staff when choosing between desserts with enigmatic titles such as ‘chocolate with emeralds and strata’ or ‘yellow brick road’; what’s sure is that they all involve clever combinations of finely judged flavours.
