He may have spent years in the kitchens of Gordon Ramsay and Marcus Wareing, to name but two stages in an impressive career path through some of the UK’s top foodie joints, but Alyn Williams isn’t the sort of chef who courts media attention. Since 2011, his dedication and high-level artistry have been rewarded with his own name over the door of the top-end dining venue of The Westbury Hotel, an address that is a fixture among the A-list of Mayfair's five-star hotels. A cocktail among the art deco-inspired Swarovski crystal fittings and Fendi-designed accoutrements of the Polo Bar is a good move to set the mood for the Alyn experience, which unfolds with impeccably correct, seamless and unobtrusive service in an unshouty yet unmistakably glossy space where oatmeal-hued chairs at amply spaced linen-swathed tables are set against softly burnished darkwood panels, huge mirrors and romantic, subtly-backlit alcoves. It all makes a confidence-inspiring backdrop for the culinary fireworks to come. Supported by a trusty and well-established kitchen team, Williams has had time to explore his own territory here, evolving a highly personal take on modern European cuisine, using unusual ingredients and pin-sharp techniques to produce creative and dynamic food. A seven-course tasting menu delivers the full works (a non-meat version means vegetarians are not sidelined) with optional wine or beer flights; otherwise, there’s an à la carte option. High on flavour, thought, inspiration and – yes – fun, an opening course of roasted lobster with lobster taco, dirty guacamole, green gazpacho and chimichurri dressing is an explosion of well-balanced flavours coupled with high-quality ingredients. Prime ingredients and faultlessly composed flavours and textures also produce seductive results in a main course showcasing Salisbury Estate venison, alongside salt-baked celeriac, juniper, blueberries and the fruity pungency of mostarda. Desserts can make their point with the simple perfection of a chocolate and orange blossom tartlet or continue to explore thrilling juxtapositions of flavor and texture via an innovative play on the ‘walnut whip’ theme. Oenophiles seeking a special experience could bag a table for eight surrounded by blue-blooded bottles in the illuminated wine salon and turn the established order on its head by choosing wine first as the basis for a bespoke menu created around it. If the pricing of the à la carte and tasting menus is a bit hard to stomach, the three-course set lunch offers staggering value for cooking of this class in such a ritzy setting.
