In case the 10-course tasting menu isn't enough of a heads-up, Andrew Wong’s dynamic eatery is a long way from your average Cantonese takeaway. The setting is pared-back and contemporary, with an open kitchen if you want to get up close and personal with the chefs as they give the repertoire of Chinese regional cuisines a thorough workout. Andrew took over his parents’ restaurant, so cooking is in his DNA and he has respect for traditional ways, but this is modern dining too, so there are contemporary elements to many of the dishes, and the repertoire draws influences from a country that has 14 national borders. Dim sum such as the pork and prawn dumpling are fine versions indeed, served on a crisp piece of pork crackling in this case, or go for the inspired clear shrimp version with citrus foam. In the evening, that 10-course tasting menu is hard to resist with its Shaanxi pulled lamb 'burger', or seared beef with mint, chilli and lemongrass, while the regular à la carte offers red braised fermented fish belly, a dish from Anhui province, for the adventurous. Creative desserts are a triumph too, as in tea-smoked banana with nut crumble, slow-cooked pineapple and chocolate sauce.
