An ornate arched portico announces the Canterbury branch of the go-ahead gastronomic hotel chain, which offers a champagne bar for that indispensable aperitif, and an expansive dining room with varnished floor, white walls and an appealing modern brasserie feel. There is also a chef's table, where up to a dozen inquisitive types can keep a beady eye on the kitchen flurry. The name of the game is well-balanced, technically accomplished cooking with much use of Kentish produce. Start with a lightly torched breast and confit leg of quail served with cheesy semolina gnocchi, puréed parsley and a truffled egg yolk, before moving on to a fish such as red mullet in south-east Asian garb with bok choi, sesame seeds and peanut butter in a chicken jus, or wonderful local beef fillet in a classical presentation with violet artichokes, roast garlic and ceps on a robust reduction of red wine. Simple combining of flavours confers class on a textbook raspberry soufflé with pistachio ice cream, or on strawberry bavarois with minted cucumber sorbet, and there are local cheeses to consider too.
