An ornate arched portico announces the Canterbury branch of the go-ahead gastronomic hotel chain, which offers a champagne bar for that indispensable aperitif, and an expansive dining room with varnished floor, white walls and an appealing modern brasserie feel. There is also a chef's table, where up to a dozen inquisitive types can keep a beady eye on the kitchen flurry. The name of the game is well-balanced, technically accomplished cooking with much use of Kentish produce, and there’s a tasting menu if you fancy it. Start with braised pig cheek with pickled lotus root and crispy shallot, or crab with lime confit, mooli, and peanut chilli caramel. Main courses might include sea bass with Jerusalem artichoke, smoked artichoke and chorizo sauce, or fillet of Kentish beef with salsify, oyster mushrooms and lovage. Dessert could be black sesame brûlée with honey and nutmeg ice cream, or go for the local cheeses with homemade chutney.
