Full of elegance and swagger since it opened in 1890, the majestic Grand Jersey Hotel still holds an undeniable allure with its glitzy spa and slew of eating options. Soaking up the view over the sparkling waters of St Aubin's Bay, champagne in hand, on the terrace is a prime attraction, as is the main restaurant, Tassili, an elegantly understated contemporary space with a high-gloss finish that has the good sense not to try to compete with that prospect over the bay. Nicolas Valmagna heads up the kitchen team, lending class to culinary matters with his well-honed French technique, keen eye for local materials, and talent for mixing global ideas: crab, say, might appear in a starter with passionfruit gel, Combava lime, bisque dressing and coconut espuma, or pan-fried goose liver could be paired with rhubarb, pistachio, pain d’épices purée and lychee espuma. Carefully structured mains leave an overall impression of lightness and grace, whether it’s skillfully handled turbot with subtly flavoured saffron risotto, mussels, sea veg and caviar, or a more visceral combo of grass-fed lamb, the best end and sweetbreads lifted with samphire, spring onion, tempura anchovies and wild garlic pesto. Creative ideas and contemporary technique follow through into desserts such as a trio of chestnut purée, quince mousse and buttermilk sorbet.
