Overlooking the harbour, terrace tables at Sumas are in high demand when the sun shines. Needless to say, there’s a good amount of seafood on the menu and local hand-dived scallops, radish, fennel, green apple and hazelnut is a great way to start. Main course delivers brill, crab ravioli, spinach, fennel céviche and smoked butter sauce or pot-roast guinea fowl, Morteau sausage and plum tomato cassoulet. For dessert, meadowsweet parfait, honey, cultured yogurt, caramelised lemon and meringue wraps things up. A separate vegan menu offers the likes of kombu-steamed celeriac, wilted greens, edamame beans, wild rice and parsnip dashi.
