If you’re thinking ‘floating restaurant’, you’re on the wrong course with this royal yacht, although the waters of the marina are glittering below, and its curvaceous, wave-shaped balconies do lend a maritime air to the glossy harbourfront bolt-hole. It’s a slick, upmarket affair, with expanses of plate glass facing the harbour, and high-end facilities including a glitzy spa centre to pamper away the cares of the world, plus ample dining and drinking opportunities to keep you refueled and refreshed, running from a grill restaurant to the casual all-day Zephyr eatery, the pick of the bunch being the snazzy Sirocco with its huge terrace opening up sweeping views over the harbour through full-drop windows. A cosmopolitan ambience and designer chic looks – coffee-hued napery, tones of magenta and eye-catching light fittings – conjure a fittingly slick setting for pin-sharp modern British cooking. Steve Walker’s menus are big on flavour and technical panache and put together with an acute eye on the seasons. A starter of succulent seared scallops comes in a feisty surf n’ turf pairing with oxtail, alongside silky cauliflower purée and cheddar cheese beignet. As you would hope in the island setting, fish gets star billing among main courses – witness a luxurious partnership of well-timed turbot, scattered with pistachio crumb, and a sweet medallion of lobster supported by puréed and caramelised Jerusalem artichoke, or perhaps a classic treatment of Dover sole, simply grilled and served up with caper butter sauce and Jersey Royals. The kitchen also delivers well-rehearsed meat dishes in which prime ingredients and sympathetic combinations produce seductive results – perhaps tender cannon of lamb with potato terrine, peas, lamb’s lettuce and onions, or if you’re a sucker for timeless tableside theatre, go for a classic steak Diane, flambéed at the table and partnered with Lyonnaise potatoes and green beans. Desserts are also handled with impressive dexterity, as seen in a zesty tropical alliance of super-light coconut mousse with passionfruit ice cream, fresh mango and meringue. If you don’t want to envy your partner’s pudding, two might go for a sharing assiette and have a taste of everything or conclude on a savoury note with a plate of expertly ripened local, British and continental cheeses. The evident balance and thoughtful composition in the food is reflected in a pedigree wine list that takes off in France then spreads its wings around carefully chosen bottles from all over the world, with a couple of dozen by the glass.
