This Royal Yacht is most definitely not an actual seagoing vessel, but its curvaceous, wave-shaped balconies do lend a maritime air to the glossy harbourside hotel. It’s a distinctly upmarket affair, with acres of plate glass facing the harbor, a glitzy spa centre to pamper you into submission, and a host of dining and drinking opportunities, including a grill restaurant, the casual all-day Zephyr eatery, and the pick of the bunch being the snazzy Restaurant Sirocco with its huge terrace affording views over the harbor through floor-to-ceiling windows. The stylish space brings a cosmopolitan ambience and designer chic to proceedings, with its coffee-hued napery, tones of magenta and eye-catching light fittings conjuring a slick setting. The team in the kitchen is dedicated to delivering local ingredients, and the imaginative menus – à la carte, table d’hôte and tasting versions – showcase their ambition. These are pin-sharp modern dishes, with successful flavour combinations, plenty of technical ability on display, and put together with an acute eye on the seasons. Dishes arrive looking pretty as a picture, a starter of succulent butter-poached lobster, say, with cocoa butter, parsnip and caviar, while another opener sees a fashionable surf n’ turf pairing of seared scallops and oxtail alongside cauliflower and cheddar cheese. As you would hope in the island setting, fish gets a good outing among main courses – perhaps a classic treatment of Dover sole, simply grilled and matched with caper butter sauce and Jersey Royals, or a more contemporary combination of pan-fried sea bass with black garlic, crab and gnocchi. On the meatier side of things, the island's beef could be showcased as succulent fillet and tender cheek, served with morels and asparagus, while those who have a soft spot for theatrical service might sign up for a timeless steak Diane, flambéed at the table and partnered with Lyonnaise potatoes and green beans. Desserts are equally focused on maximizing flavour and textures, and arrive looking easy on the eye, whether you go for a perfectly risen apple crumble soufflé with its accompanying apple sorbet, or a chocolate sphere with salted caramel and honeycomb. If you just can’t make your mind up, a pair of willing accomplices might go for a sharing assiette and have a bit of everything, or bow out on a savoury note with a cosmopolitan plate of expertly ripened local, British and continental cheeses. The pedigree wine list starts close to home in France then spreads its wings to take in carefully chosen bottles from all over the world, with a couple of dozen by the glass.
