Not far from the Maritime Museum, The Club Hotel and Spa is poised to dispense refreshment of all kinds, from gentle abrasions of the skin to wholesale seductions of the palate. Cocktail masterclasses for budding shakers and stirrers are a must, and the bountiful views from the rooftop bar terrace offer the best kind of orientation. When it comes to dining, a booth-style table on the edge of the kitchen action will be a strong draw, and there are more private dining spaces than you can shake a cocktail stick at. The core of the operation, though, is the Bohemia Restaurant, where against a gently lit background of sleek wood and scribbly-patterned banquettes, Steve Smith continues to produce the most outstanding food in the Channel Islands. At its root, this is classic cooking, but excitingly reworked to create novel and innovative dishes. Everything on the menus is ingredient-led, utilising thoroughbred produce. Execution is sharp and precise, with bold flavours that can be complex, but are always carefully considered. The first consideration is to decide what you want to eat: the multi-course tasters are classified according to vegetable, fish and omni regimens, with a Prestige Menu of nine courses (plus the option of Bordier's artisan cheeses). Whichever route you opt for, there are discoveries to be made. The vegetarian menu might centre on successive courses of Roscoff onion with chanterelles and kale, and then a composition of heritage carrots, sea veg and citrussy sea buckthorn, while fish builds through the wonderful crab custard tart with mango and coriander, followed by sea bass and smoked eel with rock samphire (the choicest kind), leading to turbot and mussels, with more of that abundant sea buckthorn. At the Prestige tables, by then, they could be on to a serving of Goosnargh duck glazed in blood orange with chicory and medjool dates, having earlier been treated to a showstopping steak tartare made with Belted Galloway beef, its fatty richness counterpointed by raisins and capers. Calling a Kir Royale a pre-dessert sounds like the best kind of euphemism, while the dessert dishes themselves play variations on spiced apple and blackberry, or cranberries, lychees and lime spiked with rose-attar Lanique liqueur.
