In the picturesque fishing village of Seaview, on the island's northeast coast, this long-established hotel is just 50 yards from the sea that supplies much of the fish on the menu. The cooking is refined with classic techniques letting tip-top ingredients speak for themselves. A late autumn starter of wood pigeon breast with parsnip purée, curly kale, chestnuts and truffled jus might be followed by line-caught sea bass, roast peppers, samphire, mussels and lemon thyme sautéed potatoes. Invention doesn't stop at desserts such as coconut and fennel pannacotta with chilli meringue, chervil and ginger syrup.
