The ancestral home of the Clan Donald high chief is a fittingly grand white building, standing in brooding isolation at the head of Loch na Dal. Unlike many such an old house, the present scions of the family still live in it, and see to it that it provides a warm island welcome to guests from far and wide. Lady Claire Macdonald has long been a cookery author in her own right, and with the extravagantly gifted Marcello Tully in the kitchens, it's clear that fine food is guaranteed to be front and centre. The fixed-price dinner menu doesn't just linger in country-house hotel territory, but mobilises exciting flavours and excellent ingredients to stimulating effect. After an opener of gently Indian-spiced butternut squash soup, it could be seared West Coast scallops bundled up in Parma ham with peanut sauce, and then sublime Angus beef fillet with a mousse of Strathdon Blue, celeriac and confit shallots, sauced in brandy. Reverse the fish and meat order, and it may be a pairing of pigeon breast and Stornoway black pudding with beetroot in citrus jus, followed by Shetland cod and Drumfearn mussels with caper pesto in cucumber and shallot dressing. Vanilla pannacotta made with crème fraîche comes with orange and mint sorbet.
