Occupying a grand Georgian mansion built for the Earls of Clarendon in 300 acres of prime Hertfordshire countryside, The Grove has all the bases covered for aficionados of the 21st-century luxury country hotel experience. That means a championship golf course, spa pampering and sleek old-meets-new decor – there’s even an urban beach in a walled garden. The trio of dining options peaks in Colette's, where Russell Bateman's avante-garde culinary stylings are given free rein. Bateman has served time with some of the big hitters of contemporary Anglo-French gastronomy – Gordon Ramsay, Marc Veyrat and Marcus Wareing – and he's on a mission to dazzle. It all starts with the raw materials of course, many from the estate's organic walled garden. A starter of diver-caught scallops is offset with the flavours of pickled celeriac, toasted hazelnuts and brown butter hollandaise, or the richness of foie gras might be leavened by ginger beer, poached apple and brioche. Main course focuses on the sheer quality of roast brill, which arrives in a picturesque medley with butternut squash purée, rich mushroom duxelle, chicken wings and roasting juices. Dessert brings another expertly worked interplay of texture and flavour, matching tonka bean pannacotta with chestnut foam, chocolate cannelloni, vanilla sorbet and a buckwheat cracker
