Jake Saul Watkins has been cooking here in Petersfield for nearly 20 years, more than half of that time at this beautiful 17th-century former coaching inn. The pale, neutral colour palette in the dining room draws attention to the wealth of ancient beams above, and there’s plenty of space for the smartly-dressed tables. Everything’s made in-house, from breads and ice cream to canapés, terrines and chocolates. JSW himself is a passionate advocate for allowing brilliant ingredients to speak for themselves, and dishes are carefully considered and precisely constructed. There’s a choice of tasting menus, or you can stick with the carte – there’s also a veggie menu. Maybe start with smoked mackerel, roots, brassicas and burnt hay oil, or scallops, spiced mussels, razor clams and ruby pearls – seafood is a particular strength. Main courses might include South Downs lamb three ways, accompanied by burnt hispi and winter veg, and the wonderful 72-hour beef cheeks with hops, marrow, dripping and chips. The blackberry, apple and cinnamon jammy dodger is a fun dessert, or try the honeycomb parfait with Valrhona ganache and raspberry.
