The chef-proprietor's initials provide the name for this relaxed restaurant in an immaculately whitewashed 17th-century former coaching inn. Jake Saul Watkins is a Hampshire man born and bred who has been cooking up a storm in Petersfield for 18 years, and in this current venue since 2006. The dining room has heaps of character: venerable oak beams and an understated contemporary decor – neutral hues, generously-sized tables dressed in pristine linen – and there are three smart rooms if a stopover appeals. This is a chef who cooks with a passion for his craft, starting with the best materials he can lay his hands on, and a belief in keeping things simple, underpinned, naturally, by virtuoso technique and an innate feel for what works together on the plate. Whether you go for the carte, or splurge on the six- or eight-course tasting menus, everything is made in-house with top-level skills. Fish and seafood are a strong suit – perhaps sea-fresh scallops, timed to perfection and partnered with lightly curried mussels and borage. Next up, fallow deer might come with shallot tart, hay-baked parsnip and coffee sauce. Dessert brings a clever reworking of an old favourite, matching baked English custard with rhubarb, ginger beer jelly and gingerbread.
