Set within the expansive acreages of the Dogmersfield Estate, the Four Seasons' dining options include a bistro and café, but the main event is the Seasons restaurant, a light-filled space with French windows and an upscale, gently contemporary sheen. You might start with a soft-boiled duck's egg with girolles, glazed asparagus and a glossy duck emulsion, followed by roast beef tenderloin paired with oxtail-filled rigatoni, crispy potato, organic mushrooms and bordelaise sauce. Fishy mains could be pan-seared turbot with brown butter, spinach and basil purée and bouillabaisse jus. For a satisfying finish, go for something like crème brûlée infused with Hampshire lavender.
