The Careys Manor Hotel is to be found in the New Forest, an environment its restaurant celebrates in every particular. Cambium is a technical botanical term for the inner tissue of plants or trees, and you only have to contemplate the decor, which incorporates leafy screens and a central bare-twigged tree with purple flowers stuck on it, to note the homage paid to the sylvan setting. Alastair Craig's cooking plays its part too, with plates that look pretty and deliver convincing natural flavours. A starter serving of beef carpaccio dressed with capers and a soft quail egg is all about moistness and freshness, or there may be goats’ cheese pannacotta garnished with cooked and raw garden beetroot. At main, roast venison haunch is sublimely pink and tender and comes with red cabbage and puréed swede, while plaice roasted on the bone is served in seaweed butter with crushed new potatoes and chard. Rhubarb parfait with gingery oat crunch and tonka bean ice cream is a dessert of pleasing textural contrasts, or there might be Baklava made with almonds and pistachios, with mascarpone ice cream.
