Long-time owners Ramon and Karen Farthing have recently established a new partnership at 36, with Gary and Martina Pearce assuming the running of day-to-day operations at their restaurant-with-rooms on the harbourside of a tranquil Hampshire fishing village. It's a wonderful spot, best enjoyed by starting with a drink in the courtyard, before heading inside to the bright, light-toned dining room. Gary Pearce's cooking maintains the reputation of the place for carefully crafted modern cuisine that achieves memorable impact. That's certainly the case in an opener of duck pastrami with duck liver parfait, with a little side-serving of truffle-mayonnaised duck sandwich on pumpernickel bread, while main course could be John Dory in a coating of pumpkin seeds and sage, adorned with fresh crab and some pumpkin purée, in light chicken jus, or perhaps seared veal loin and cauliflower cheese made with Hampshire's very own Tunworth, garnished with a crisp-fried veal kidney, turnip tops and pine oil. The finishing flourish sees spiced figs sweetened with caramelised white chocolate, served with crème fraîche ice cream and richly cinnamoned pain perdu, or will have you reaching for your Larousse to look up the kouign-amann (it's a crusty Breton cake of bread dough) that comes with roasted pear and egg nog parfait.
