Occupying a rather handsome pair of Georgian townhouses, with gorgeous Thames views making the covered balcony a hot ticket for alfresco dining during the balmy months, the Bingham sports a boutique look straight out of an interior design magazine. Easy-on-the-eye neutral hues and an ambience of calm set the tone in the mirrored and chandeliered dining room – it’s all very glossy indeed, but not so much as to upstage the cooking of Andrew Cole, a skilful chef who coaxes sharply-defined flavours and textures from top-drawer materials in his well-conceived modern British creations. A lively starter matches cured trout inventively with mildly pickled white asparagus and lovage pesto. Main-course pork belly comes in an elegant and harmonious composition involving white pudding, samphire, mashed potato and the balancing bitterness of chicory, or if you’re up for fish, there might be a fresh and vibrant juxtaposition of salmon with squid, broccoli and ratte potatoes, all lifted by a pungent wasabi butter sauce. After that, a creative reworking of tiramisù partners mascarpone mousse with coffee ice cream and crunchy dehydrated sponge.
