The Timmers had what might be seen as a practice run at restaurateuring in southern Portugal, having for many years run a successful establishment on the Algarve. Now they have come to rest in the Edenlode Valley, a protected natural beauty spot in the Cotswolds, where they stumbled upon a village pub that had been converted from an old malthouse. A little more transformative magic, and the place is a rural inn with stylish guest rooms and grounds that take in all the soothing delectation the west of England has to offer. Kingham station isn't far away, for those tempted to hot-rail it out of Paddington for a breath of country air. A table on the garden terrace is a thing devoutly to be wished on a summer's day, but inside is rather enchanting too, with its stone walls, flagged floors and antique furniture. Kuba Winkowski runs a very busy kitchen that bakes, ferments, churns, cures, dry-ages and smokes much of what the menus offer, as well as sending out battalions of cakes and sandwiches for an afternoon tea worthy of the name. His principal menu takes a streamlined approach, offering a single list of dishes, from which you compile four or six that take your fancy. Start perhaps in Italian fashion with partridge tortellini in game consommé, or with an on-trend Spanish pairing of octopus and chorizo garnished with purslane and saffron-yellow aïoli. Main dishes nod to tradition with classic presentations such as Dover sole and brown shrimps, albeit accompanied by today's indispensable cauliflower purée, or the fabulously rich beef fillet and foie gras in a truffle-laced Madeira sauce. At the more up-to-date end of the spectrum, a serving of beautifully tender sika venison with crosnes and salsify in a bilberry-strewn jus is a model of balanced combining. For dessert, it could be Valrhona chocolate ganache with peanut butter and goats’ milk ice cream, or a sablé breton of apple in Calvados caramel. The simpler lunch menu offers a pair of options at each stage, perhaps rabbit and bacon terrine with celeriac and chanterelles, before cod and squid with noodles and nasturtiums, and then hazelnut nougatine in coffee sauce to conclude. Vegetarian and children's menus indicate a diligent willingness to please everybody, and the drinks department does the same, with hand-cranked cask-conditioned ales in the pub and a wine list that features some quality boutique bottlings from South Africa.
