Nothing screams exclusivity quite like an old rural manor house entered by automated gates, its 10 acres of grounds blending imperceptibly into the surrounding West Country village. The house itself is medieval, full of period detail and elegant modern furnishings, with a white-panelled dining room the centre of attention. With views of the gardens and distant hills as backdrop through three windows, it's a supremely relaxing setting for Will Guthrie's ingeniously balanced modern British menus. Sourcing carefully from regional suppliers, with aromatic lift provided by Buckland's own herb garden, the kitchen manages the impressive trick of presenting classically based cooking with some of today's stylistic flourishes. First up might be breast of smoked wood pigeon, which comes forth in a glass dome filled with its smoke, its potent savouriness offset by preserved orange, crispy feta, radish and pistachios, a bravura composition that might be the prelude to a tender piece of cod topped with a disc of crunchy cracked wheat, a seasoning of ras el hanout competing with subtle saffron sauce, or perhaps veal loin with barbecue-smoked bacon and red onion purée in Madeira jus. A stimulating pre-dessert then announces the main sweet business, which could be a coconut bombe with pineapple salsa, lime curd and passionfruit sorbet.
