Conceived on a research trip to the Hebridean west of Scotland, the Reid brothers' venue in the Finnieston district of the city is a continuous tribute to the produce of the growers, breeders and gatherers of the islands and coasts. Transposed into the more obviously urban setting of a modern bistro with walls of bare brick and stone, it takes on a new identity in the form of lively European dishes that mobilise up-to-date technique but without undue complication. Cured sea trout with charred and pickled cucumber in herb dressing sits alongside white pudding made in-house and served with lamb sweetbreads and caramelised onion among starters. Main courses might reach to the northerly extremities for Scrabster cod with mussels and salsify in pancetta sauce, or partner superb red deer with cavolo nero, wild mushrooms and burnt carrot purée in a gamey reduction. At the finish, there are farmhouse cheeses in tip-top condition, or tempters such as blood orange, almond and basil tart with cardamom ice cream. A wine list of true discernment includes Coravin selections by the glass.
