The Rusacks Hotel seems to have a little of everything going for it, from its proximity to the West Sands beach seen in Chariots of Fire to its adjacency to the Old Course at the Royal and Ancient. Your whistle wetted in the R Bar overlooking the clubhouse, you'll be ready to proceed to the Rocca dining room, where, naturally enough, there are panoramic views of the putting, with the all-important 18th hole just below the windows. Tony Borthwick cooks to a classical template, with less emphasis on the Italian these days, though saffron risotto and truffled tagliatelle still adorn the menus. A satisfyingly rich fish soup might open proceedings, perfectly timed salmon, sole and scallops generously crammed into a gingery broth, to be followed by prime Angus beef, the roast sirloin and burgundy-braised cheek accompanied by smoked carrots and shallots. Classy fish dishes may include Gigha halibut served with brown shrimps, spring leeks and beach herbs. It all ends with a flawlessly risen soufflé flavoured with the ingredients of cranachan, principally incomparable Scottish raspberries, or perhaps something from further afield in the shape of pineapple baked in rum and spices with brown sugar custard and sweet tapioca. The five-course tasting menu offers a comprehensive tour.<
