When you hear that a restaurant is family-run, images of cosy dining rooms and traditional cooking spring to mind. This is in fact the polar opposite of the Radford family’s vision for Timberyard, where they have taken a brick-built, 19th-century warehouse (the place was once a theatrical storehouse, then a lumber merchant’s premises, hence the name), and left it fashionably stripped back and spartan, all hard surfaces and a rough-and-ready approach to interior aesthetics. You enter through postbox-red garage doors into a high-ceilinged dining space of whitewashed brick walls, old bare floorboards, stark white columns, bare halogen bulbs, and hard classroom chairs. Wine – quirky and interesting natural bottles, of course, sourced from artisan producers – is stacked in racks alongside the bar, the upper levels reached by ladder. The set-up also incorporates an in-house smokery and butcher, as well as finding little nooks for growing herbs and edible flowers. There are a couple of tables outside under the birch saplings and an area sheltered by a lean-to (Scottish weather, obvs) in the yard. Dishes arrive on chunky unglazed pottery, the bread on a slab of varnished wood, and ingredients provided by Lothian growers, breeders and foragers lead the way. If you’re dropping by for a light lunch or pre-theatre grazing, a menu of ‘bites’, small and main-course-sized plates offers up the likes of octopus with burnt apple, kohlrabi and nasturtium, or cured pork belly alongside ramsons, onion, potato and horseradish. Otherwise, the full-works options take the shape of four-, six- or eight-course tasters, with omnivore, pescatarian, veggie and vegan versions covering all the bases. Led by Ben Radford, the kitchen sends out inventive dishes assembled from intriguing components: sea-fresh raw scallop, for example, is matched with apple, elderflower and dill, followed by rabbit with a sensory slalom of salsify, hazelnut, brown butter and sage. Next up, perhaps venison starring with a cast of ramsons, beetroot, juniper and onion in various textural guises, or if you’re in the mood for fish, trout and plump mussels supported by the earthy notes of turnip, wild leek, crow garlic and the refreshing sharpness of yogurt might fit the bill. The finisher might be a simple ingredients-led compilation of dynamic flavours, poached rhubarb, say, with sheep's milk yogurt, cream cheese and a crunchy biscuit for textural variety. Enthusiastic and knowledgeable staff who are clearly on message with Timberyard’s culinary ethos and sustainable and ecological principles make sure everything ticks along smoothly.
