A venue in the environs of the castle has got to have a head start in Edinburgh, and the sibling restaurant to the much-lauded Kitchin at Leith steps up to the challenge. In a dark blue room with a spacious modern feel and an outline image of the castle picked out on the wall, Dominic Jack plies a contemporary Scottish nature-to-plate style, with enough brio to offer a Land and Sea surprise menu with optional wine pairings, opening with a glass of champagne. The carte itself furnishes a heartening spread of choice, perhaps beginning with flawlessly timed Orkney scallops given the Indian treatment with a light curry sauce and garnishes of miniaturised naan and poppadum, mango chutney, pineapple and sultanas. Main course might be fillet, belly and cheek of Ayrshire pork with black pudding, fondant potato and creamed cabbage, or the house take on paella, served on spelt risotto. A signature dessert of apple mascarpone cheesecake with caramelised sesame seeds and apple sorbet competes with dark chocolate and orange délice for attention.
