Simon Hulstone is into his second decade at the Elephant, a graceful beast that sits to one side of the harbour. The whole operation, once divided over two floors, now takes place in the split-level ground floor room, an airy, refreshing space, its two wings communicating by giant gilt-framed mirrors, while painted bare wood tabletops enhance the seaside atmosphere. The cooking is dynamic, precisely weighted and inspired, sourced from the Elephant's own farm and thoroughbred Devon producers, and retains the knack of creating an anticipatory thrill from one dish to the next. A seafood route through the menu might be Brixham crab with dashi jelly and crispy chicken skin, the brown crabmeat spread on toast à la croquet-monsieur, and then Norwegian fjord skrei cod with smoked leeks and hen of the woods in a glorious broth boosted with allium oil. Otherwise, there could be tip-top local venison loin with variations of celeriac, tartly offset with sauerkraut and apple. At dessert, a spin on custard tart flavoured with sea-salted caramel is hard to resist, the more so for its comfortingly spicy cassia cinnamon ice cream, or else plump for some new season's rhubarb, adorned with white chocolate and sorrel, alongside lemon cream and champagne jelly.
