A new-build stone edifice on the border of the Peak District National Park, the family-owned hotel is handy for the historic houses of Chatsworth and Haddon Hall. Not all is pristine modernity, for next door is the Red Lion, a Georgian coaching inn that is home to the hotel's bar and bistro, where the stock-in-trade is inventive contemporary British cooking. First up might be pigeon breast with fig and ricotta tart, before main course brings nicely timed pollack with crab risotto in langoustine oil with apple and fennel salad. Proceedings conclude in like manner with banana-peanut bavarois and chocolate ale cake.
