The Cavendish is a stone-built hotel acquired in 1830, where dining consists of a roll call of modern classics such as seared scallops with black pudding and pea purée, roast pigeon breast with couscous, and loin and haunch of venison with celeriac and beetroot in chocolate jus. But the beaten track is also profitably abandoned for the likes of tandoori monkfish cheek with pumpkin purée, butternut squash cake with wilted greens and spiced lentils, and pecan pie with blackberries and salted brown butter ice cream. If you're a stickler for tradition, the artisan English cheeses are of the gold standard, and there's apple crumble and vanilla ice cream too.
