The understudy to L'Enclume sits cheek by jowl with its elder sibling in tranquil Cartmel, with a trickle of a river running alongside it. Behind the stone façade, a modern space has been fashioned, with zinc-topped tables under the gnarled old beams and a happy buzz of contented custom. The Rogan signature style of modernist treatments of gold-standard Cumbrian produce, some of it sourced from the proprietor's own farm in the surrounding valley, is capably expressed in menus that showcase a broad range of technique. Start with cured mackerel and an oyster, a bracing dish set alight with the contrasting sharpnesses of pickled vegetables and wasabi, before turning to a main such as the Rogan farm's pork loin in its own broth with spiced cannellini beans. Cauliflower dressed in Red Leicester, or confit new potatoes with garlic and thyme, are certainly a cut above the side-dish norm.
