The hall takes its name from the hipping, or stepping, stones crossing the little stream that runs past the old wash house of this three-storey stone property in mature gardens between the Lake District and the Yorkshire Dales. Smartly furnished and decorated with guests' comfort in mind, it's a great place to get away from it all. The restaurant provides a stylish environment, with its boarded floor, high-backed upholstered chairs at generously spaced tables and a cracking log fire. Oli Martin is a sure-footed chef with bags of flair, creating daily-changing menus (with wine suggestions) based on local produce, from Cartmel Valley rabbit (with lardo, celery and borlotti beans) to Lakeland beef fillet (with Jacob's ladder, mushrooms and radish). Ingredients work effectively together to make appetising dishes. Ox tongue with an egg yolk, beetroot and watercress, for instance, may be followed by loin and cheek of Yorkshire pork with carrot 'ketchup', hazelnuts and chicory. Seafood is a strong suit too: witness seared scallops with seaweed, roast parsnips, walnuts and truffle, then wild sea bass fillet with shrimp butter, salt-baked celeriac and aubergine. There's a tasting menu as well as the carte, and puddings can be as inspired as pomegranate curd and sorbet with toasted rice and popcorn.
