Standing in glorious mature gardens, Hipping Hall takes its name from the hipping, or stepping, stones crossing the little stream that runs past the old wash house. The pocket-sized country house has a timeless appeal, and a real draw in its restaurant, a stylish space dating from the 15th century, with boarded floors, soaring oak beams and a grand fireplace. The setting is in complete contrast to the solidly 21st-century creations of Oli Martin, a sure-footed chef whose cooking is on a roll, creating culinary fireworks from superlative local produce. There are 6- and 9-course tasters as well as the carte. Perfectly roasted guinea fowl gets things going, served with confit leg, turnip purée, apple, nut praline and a bitter note of hops. Seafood is a strong suit too: witness the superb attention to detail in a main course showcasing gold-standard Skrei cod matched with puréed and roasted celeriac, plump, gently pickled mussels, with herb oil and judicious use of fresh dill bringing it all to life. If you’re in the mood for something meatier, there may be beef with turnip and pine nut. An arsenal of techno bells and whistles are deployed in an inspired dessert involving a chocolate sphere filled with truffle cream and mousse, alongside mandarin sorbet and gel.
