The Victorian Gothic house a little outside Grasmere has been creatively reworked into the image of a contemporary eco-friendly hotel. Its large wood-floored dining room has views around three sides, and is furnished with solid plank tables that have been recycled from the previous flooring, between which staff dressed for a rather smart hunting party glide about in serene command, delivering and explaining Kevin Tickle's complex, ingeniously conceived Lakeland food. Choose either the tasting formula in six or ten stages, or the tripartite format if you want to go à la carte. All routes lead to astonishment and delight, with dishes built from foraged natural ingredients and prime local produce. The opener might be a bowl of kohlrabi and surf clams, scented with marshland flora, over which a seaweed broth is poured. That salty, sea-fresh start is then counterpointed by earthier, sourer notes in a salad of duck hearts interleaved with ribbons of salt-baked turnip and smashed pickled walnuts. Fish might be Atlantic cod with a scattering of Flookburgh brown shrimps and onion purée, before dry-aged Middle White pork arrives with a refined honour-guard of umbellifers, cultured pollen and birch sap. Hedgerow and garden fragrances continue to waft hauntingly over desserts such as sweet cheese parfait with sea buckthorn and coltsfoot, or rhubarb in burnt butter with sweet cicely.
