In the 1840s the new-fangled railway reached what was then known as the 'District of the Lakes', much to the exasperation of the Wordsworths, and brought not just excursioners but relocators into the area, prompting a modest building boom. Among its products was the present stone building, so named for its position in the shelter of a stretch of wooded hillside, now sensitively reborn as an appealing country hotel. An expansive dining room staffed with smart, knowledgeable personnel looks out on to the Lakeland setting, which takes on vital importance in Kevin Tickle's regionally inspired, exciting culinary style. There are foragings and gatherings aplenty, as well as prime materials such as Cumbrian rare breed pork, which might form the centrepiece of the multi-course taster, accompanied by smoked potato custard, damsons, and what the menu summarises as 'garden shenanigans'. Technique is key to the surprise element in every dish, from chanterelles cooked in bone marrow with corned brisket, anointed in mushroom broth, to the scorched pear with malt, birch sap and a shot of staggeringly intense ginger beer. Those haunting herbal notes lend fragrance to many dishes, including savory-scented lemon sole and dill-fronded cod and oyster, while autumnal fruits are celebrated in a dessert of salted wild plum with apple and sloes. The vegetarian menu is a tour de force in itself, building up to a principal serving of smoked squash with hen of the woods and vitamin C-laden scurvy grass. Accompanying it all is an inspired collection of biodynamic and natural wines.
