A modern hotel with a spa and host of dining opportunities, the Farm Steakhouse is the latest addition and makes perfect sense given that the owners keep several hundred head of Angus cattle on their nearby farm. It's a smart dining room done out in dark, moody shades. Start with seafood platter or highly-flavoured beef tea, while an alternative to steak among main courses might be rump of Wicklow lamb or 'poisson du jour'. Those steaks are dry-aged for 36 days and come with vegetables from the farm, Pont Neuf potatoes and a sauce such as béarnaise - tender roast prime rib, say, cooked just right.
