With its dark oak panelling, intricate plasterwork ceiling and ancestral portraits, The Munster Room is exactly what you'd expect from the dining room of a luxe hotel set on its own private 300-acre island. It's a jacket-and-tie affair with a pianist adding to the old-school ambience. The modern Irish cooking is underpinned with French classical roots. So the daily-changing menu might start with a savoury éclair filled with smoked potato mousse with shimeji mushrooms, granola and beurre noisette, followed by plaice with nori, broad beans, samphire, crab cream and soy gel. To finish, there's dark and white chocolate mousse matched with mango and passionfruit.
