Once home to the Barton wine family, this luxurious hotel has the look of a French château and there are dining options aplenty, not least of which is the River Restaurant, with its impressive views of the Liffey. The cooking is built around classic technique but there is a pronounced regional influence when it comes to ingredients. Irish buffalo mozzarella teamed with a punchy Bloody Mary jelly and basil custard might precede a full-flavoured main of Achill Island blackface lamb with goats' cheese fondue, mint and wild garlic oil. Rhubarb parfait with poached fruit makes for a satisfying finale.
